Let’s Eat – My Beefy Bean Soup
My Mom comes from a pretty big family. Two brothers & three sisters plus kids, grand-kids & even some great grand-kids, make for a large gathering.
Getting together with my family is something I really enjoy.
Listening to my Mom and her sisters talk and gossip can be absolutely hilarious. They all talk with their hands, and if you get them tickled, look out! My Mom will punch you in the shoulder or slap you on the leg, if you’re sitting close to her.
(My sister, does the same thing. Jerry won’t even sit beside her.)
We get together a couple of times a year for reunions and lots of food!
There is always plenty to eat. Our family has some really good cooks.
About 2 years ago we had a dinner and there was a bean dish that I never did figure out who made it.
So I tried to remember what was in it and recreate it. What I came up with is more of a soup than what was there, but it is delicious.
At least one of my picky girls liked it, which made me happy, and my hubby loved it as much as I did.
My husband’s comment was “this is some good crap!”
Well, I couldn’t keep call it “That good crap” so I finally came up with a name I wouldn’t mind sharing along with the recipe. I hope your family enjoys it as much as mine does.
Beefy Bean Soup
1lb ground beef
½ t chopped onion
2 cans of tomato soup
1 can of Pork & Beans
1 can of Pinto Beans
1 can of Lima Beans
1 can of Great Northern Beans
1 can of Sweet Corn
Brown Meat and chopped onions in skillet. While meat is browning put tomato soup in pot and add 1 can of water. Add the remaining cans of beans & corn, and stir. I pour the juice off the Lima Beans, but leave it in for the corn. When meat is cooked completely, drain the grease and add it to the pot. Bring your soup to a boil stirring often. Reduce heat and let soup simmer for about 45 minutes to 1 hour. Enjoy!!
This goes great with cornbread!
