During the fall of the year there are several things that I love to bake and eat. Pumpkin bread may be at the top of that list. It’s between pumpkin pie and pumpkin bread. I love them both.
Pumpkin Bread is also one of the few things that all of the family can agree on and there is never anything left. An entire loaf usually makes it’s way back with my daughter when she returns to college after a weekend visit. I’m not too sure she shares it when it goes back with her either.

Pumpkin Bread Recipe
3 cups sugar
1 cup of vegetable oil
3 cups of flour
2 teaspoon baking soda
1/2 teaspoon baking powder
2 teaspoons cinnamon
1 teaspoon allspice
1/2 teaspoon nutmeg
1/2 teaspoon cloves
1/2 teaspoon salt
2 cups pumpkin
2/3 cup water
Preheat oven to 350*. Grease and flour two loaf pans.
In a large bowl, stir together sugar, eggs and oil.
In another bowl, stir together the dry ingredients, and then add to the wet mixture.
Lastly add the pumpkin and water and stir until combined.
Divide the batter and bake for 1 hour and 15 minutes.
The cooking times can vary depending on the size of pans you use.
This bread makes great little gifts baked in mini loaf pans.
